Recipe: Lamb with Rice

Rice Deluxe

* 4 Tbs cooked lamb, diced
* 1/3 cup cooked brown rice
* 1 Tbs steamed mixed vegetables, chopped
* 1 Tbs leftover gravy

In a bowl, combine lamb and rice. Stir in the vegetables. Stir gravy into the bowl. Serve (Yield: 2 meals)

Tasty Salmon Surprise

* 1 egg (boiled)
* 3 tbs de-boned salmon (cooked)
* 2 tsp cottage cheese
* 1 tbs wheat germ

Place the egg and the salmon in a bowl and mash them together with a fork. Stir in the cottage cheese and wheat germ. Serve. (Yield: 2 meals)

Sir Sardiney

* 4 canned sardines, drained
* 1/2 tsp oil from sardine can
* 1/3 cup cooked brown rice
* 2 tsp cottage cheese

In a bowl, mash the fish and oil with a fork. Add the brown rice and cottage cheese. Stir together. Serve. (Yield: 1 meal)

Recipe: Kitty’s Ocean Delght

Kitty’s Ocean Delight

* 3 Tbs dried bread crumbs
* 1 egg yolk
* 1 small haddock fillet (about 4 oz)
* 1 tsp safflower oil

Preheat the oven to 350. Spread the bread crumbs on a plate. Beat the egg yolk in a bowl and dip the fish into the egg. Lift the fish out of the egg yolk and coat with bread crumbs. Add the oil to a small baking pan. Place the fish in the pan and bake for 15 minutes on each side. Remove fish to a dish, let cool, and cut into bite-sized pieces. You may want to add a little mayonnaise to moisten. (Yield: 1 meal)

Recipe: Hearty Cat Stew

Hearty Cat Stew

* 2/3 cup water
* 1/2 cup gravy (homemade)
* 1/2 cup mixed vegetables, steamed
* 1/2 cup cooked beef or chicken, minced
* 2 Tbs cooked potato, peeled and chopped

Mix all ingredients in a saucepan and cook over low heat until warm. Serve in a bowl, warm or hot. (Yield: 2 meals)
